Rancang Bangun Inkubator Fermentasi Tempe Sagu Otomatis Berbasis PLC Dan SCADA Dengan Sistem Kontrol PID Di Home Industry Tempe Sagu Mugi Berkah Pedurungan Semarang = Design and Construction of an Automatic Sago Tempeh Fermentation Incubator Based on PLC and SCADA with a PID Control System in the Home Industry of Sago Tempeh Mugi Berkah Pedurungan Semarang
Tempe sagu is a traditional Indonesian food product that requires stable
fermentation conditions to maintain its quality. However, fluctuations in
temperature and humidity often prolong fermentation time and reduce product
consistency. This study designed and implemented an automatic fermentation
incubator using a Programmable Logic Controller (PLC) and Supervisory Control
and Data Acquisition (SCADA) integrated with a Proportional Integral Derivative
(PID) control system. The system monitors environmental conditions in real-time
via a DHT22 sensor, processes control logic using a Raspberry Pi, and regulates
heating and cooling elements to maintain optimal temperature and humidity.
Wireless data transmission is facilitated by an ESP8266 module, and a user
interface is provided via a Human Machine Interface (HMI). The system can be
operated in either automatic or manual mode. In comparison, the previous
fermentation process was conducted conventionally, relying on ambient
environmental conditions, where temperatures fluctuated between 23°C and 32°C
with humidity ranging from 50% to 82%. In contrast, testing over 48 hours with the
automatic incubator demonstrated the ability to maintain temperature within a
much narrower range, specifically 31.2°C to 32°C, and humidity at 53.6% to
68.9%. The success in stabilizing these key parameters significantly enhances the
efficiency and consistency of the fermentation process.
